This beautiful dessert originates from La Viña, a café in the resort town of San Sebastian in the Basque region of Spain. In 1990, Chef Santiago Rivera commenced on an experiment to make a new type of cake every day. Eventually, he created the Basque cheesecake recipe.

Basque Cheesecake is baked at a high temperature to create a signature burnt top. It has a soft creamy centre and rough edges. The aroma is of browned butter or salted caramel.

You can choose to have this delicious Basque Cheesecake as it is, or I have created signature topping sauces, which can also be paired with a topping of your choosing.
